About Organic

At Dwarf Mountain Chocolatiers, our “crème de chocolat noir” (dark chocolate cream) is different. Our creation lies somewhere between a Ganache and dark chocolate. Our creamy confection is rich with pure dark chocolate. By weight, our first ingredient is dark chocolate. We only use the finest ingredients from around the world. Whenever possible we always choose certified organic products. We use no artificial ingredients, additives, genetically engineered foods or preservatives.

Ultra-Fine “crème de chocolat noir”

Pure Dark Chocolate

We use Scharffen Berger Chocolate exclusively. Their goal is to make the richest, most flavorful chocolate from the purest and best cacao that can be found. Their beans are carefully selected from a wide range of cacao-growing countries and regions, including Venezuela, Ghana, Madagascar, the Caribbean, and Indonesia. After each variety is roasted to taste in small batches, the cocoa beans are ground with large-crystal cane sugar and whole bean Tahitian and Bourbon vanillas before being conched into lush liquid chocolate. By carefully blending beans from many origins, Scharffen Berger produces a chocolate with a dense concentration of flavors that are naturally present in cacao. A complex fruitiness and long rich finish bring the best of the world of chocolate into every bite. Our Dwarves have to agree, Scharffen Berger is “The Finest American-made Dark Chocolate.”

Heavy Cream

Dwarf Mountain Chocolatiers uses Horizon Organic™ Heavy Cream. We chose the Horizon Organic Dairy, because they work hard to produce the very best organic products for you and your family. Horizon Organic™ Heavy Cream is produced without the use of dangerous pesticides, antibiotics, genetically engineered feed products, hormones or any other harmful chemicals and then ultra-pasteurized. Ultra-pasteurization is the process of heating the milk at a higher temperature for a shorter period of time than that used for pasteurization. This process allows the milk to have an extended shelf life without the use of preservatives. According to the American Dietetic Association's Complete Food and Nutrition Guide, “This process of flash heating minimizes loss of nutrients, texture, color and flavor.” Ultra-pasteurized milk and cream are as nutritious and delicious as milk and cream pasteurized at a lower temperature.

Sugar (Evaporated Cane Juice)

We proudly use Wholesome Sweeteners Organic Sugar (Evaporated Cane Juice). Organic Evaporated Cane Juice is made from 100% certified organic sugar cane. At the mill, their organic cane juice goes through a crystallization process and is bagged immediately. This is a “first crystallization” sugar, which means the cane is harvested, the juice is extracted, any field impurities removed and it is crystallized. All this is done within twenty-four hours of harvesting. Because it is far less processed than traditional white sugars, it retains a natural blond color and a delicious natural taste. Wholesome Sweeteners Organic Sugar is never sent to a refinery. Wholesome Sweeteners organic sugar cane is “green cut,” never burned, which leaves the unused plant material to decompose in the field and return rich organic nutrients to the soil.

Organic Corn Syrup

Our Dwarves had to search around the world to find organic corn syrup. Organic corn syrup that is not derived from genetically engineered corn is extremely rare and very hard to find. Dwarf Mountain Chocolatiers uses organic corn syrup imported from Austria, which bans the planting of genetically modified crops. We take the extra steps needed to find organic corn syrup in order to create a rare world-class dark chocolate cream. We proudly use AGENABON Organic Corn Syrup DE40 imported from Austria by Marroquin International.

Butter

Dwarf Mountain Chocolatiers uses Horizon Organic “European-Style” Butter. Horizon’s Organic Butter is churned extra slowly from fresh, sweet certified organic cream to produce butter with higher butterfat content and less moisture. Straight from their dairy farms, the butter is made from cream that is separated from unhomogenized milk. Horizon Organic Butter is certified kosher. Dwarf Mountain infuses our Organic Butter with a blend of Certified Organic Madagascar Bourbon Vanilla Beans and Certified Organic Tahitian Vanilla Beans.

Bourbon Vanilla Beans

We use Certified Organic Madagascar Bourbon Vanilla Beans. No alcohol or additives, just pure beans. Bourbon vanilla is the generic name for Vanilla planifolia. Originating in Mexico (vanilla’s birthplace) Bourbon vanilla cuttings were taken in the 1800s and grown by the French in large plantations in Réunion then known as the Île de Bourbon thus explaining the origins of its name. Dwarves love Madagascar Bourbon Vanilla Beans for their sweet, deep flavor with strong vanillin overtones and creamy richness.

Tahitian Vanilla Beans

We use Certified Organic Tahitian Vanilla Beans. No alcohol or additives, just pure beans. Tahitian vanilla is the generic name for Vanilla tahitensis. This variety originates from plant stock taken to Tahiti, which probably mutated in the wild. Now regarded as a different species, it’s appearance and flavor is considerably different to Bourbon vanilla. Tahitian vanilla is sweet and fruity with a floral fragrance. The bean is fatter and moister than Bourbon vanilla containing less natural vanillin. As the beans are carefully scraped for infusion in the fresh butter, there is a waft of strong fruit and floral aroma reminiscent of cherries, prunes, raisins, and anise. Dwarves love a touch of ‘Tahitian’ as an important flavor note for the complex bouquet for their dark chocolate.

All Natural Ancient Sea Salt (Trace)

We use a “dwarf-dash” of all natural, gourmet sea salt mined in central Utah. RealSalt is kosher certified and is endowed with more than 50 natural minerals including iodine. Long before the earth knew pollutants of any kind, a huge, ancient sea covered what is now North America. (Before there were Dwarves and Dwarf Mountain was under the sea.) Pure, natural salt was the main ingredient of this sea, and over millions of years, the water in the sea evaporated, leaving the salt in undisturbed deposits. At some point during the earth's Jurassic era, a range of volcanoes erupted around the ancient sea bed, sealing the salt with thick volcanic ash, protecting these precious deposits against the pollution that man would eventually introduce into the environment. Near the small town of Redmond, in central Utah, approximately 200 miles south of Salt Lake City, RealSalt carefully extracts this salt from deep within the earth, and brings it to Dwarf Mountain in its pure, natural state–free from any additives, chemicals, or heat processing. RealSalt is full of flavor and natural goodness.
